Green Chile Stew & Green Chile Sauce
I usually make double the Green Chile sauce recipe and freeze it for another meal. This makes for a quick main course when in a hurry.
Asian Lettuce Wraps
I fixed this just recently and we really liked it. The Hoisin sauce is always available at Bonanza. I used the leaves of the package of the hearts of Romaine that come in the plastic box at Mega.
Mexican Chocolate Ice Cream
This makes a very rich ice cream. I usually dissolve a tablespoon or more of instant coffee in a small amount of the warm cream mixture and then stir into the the rest of the ingredients in the pan. I use regular vanilla and mix equal amounts of crema batir and low fat milk to get half and half. This is really wonderful!
Catfish Tacos

Catfish is available at Mega. It is called suprema. I just use the chipolte mayo with the juice of one lime and a little regular mayo to cut he heat in place of the chipolte dressing recipe for the coleslaw. Start with the reglar mayo then add small amountsof the chipolte mayo to taste. Then add the lime juice a little at a time to taste.

For creole mustard use dijon and add a dash of worchestershire sauce. The secret to really good fried fish is to maintain the temperature of the cooking oil.  Use a thermometer and fry only small quantities at a time.
